Mexican style shrimp cocktail is a one dish meal that is delicious and fresh! Shrimp is very nutritious, low in calories and high in protein and other nutrients. You can cook the shrimp fresh or get some pre-cooked at the grocery store to save time!
Whip up a batch of this shrimp cocktail and serve it with tortilla chips!

Here’s a Shopping List:
- 2 lb shrimp
- 1 large tomato
- Ketchup
- 8 oz can of tomato sauce
- 1 bunch green onions
- 1 cucumber
- Celery
- 1 bunch cilantro
- Fresh garlic
- 1 fresh pepper of choice (I like banana peppers)
- 1 lime
- Hot sauce (optional)
- Salt & pepper
- 2 large avocados
- Tortilla chips
Instructions
If you are cooking your shrimp fresh, peel and devein the shrimp, drop into boiling water for 2 to 3 minutes, drain and immediately put into a bowl of cold water to stop them from overcooking, drain again and chop into 1/2 pieces (if they are large shrimp)
Chop the tomato, green onions, cucumber, celery, cilantro, pepper, and garlic, mix together with the tomato sauce and 1/4 c ketchup, fresh squeezed lime juice, and optional hot sauce (to taste). Once combined test the flavor and see how much salt and pepper you would like to add.
Cover and chill in fridge for at least 2 hours to let the flavors marry.
Just before serving cut the avocado into small chunks, mix together the shrimp and the chilled vegetable sauce.
The festive look of this shrimp cocktail allows you to be creative! Serve in large glasses or bowls, etc!
