These homemade chicken nuggets are so yummy, but I admit that I have always loved getting chicken nuggets at the fast food places! In the last couple of years though I’ve found that I feel much better if I avoid highly processed foods – So I figured, why do I need to miss out? I can just make my own chicken nuggets at home!
Free recipe – Homemade Chicken Nuggets

The key to getting a melt-your-mouth consistency is to use a food processor to chop up and mix everything together. I have links to the equipment I use at the end of the recipe.
Ingredients
For the filling:
- 3 lbs boneless skinless chicken breast
- 1 bunch scallions, trimmed (but leave most of the green)
- 2 eggs, slightly beaten
- 1 tbsp tarragon
- 1 tbsp garlic powder
- 1/2 tbsp salt
- 1/2 tbsp pepper
- 2 c shredded pepper jack or Mexican blend cheese
For the coating:
- 1/2 c flax meal
- 1/2 c grated parmesan cheese
- salt and pepper to taste
Instructions
Preheat oven to 425 F (218 C)
In a food processor, add scallions and tarragon and pulse until completely shredded.
Next add the remaining filling ingredients and run food processor until the chicken is completely pulverized and all the ingredients are mixed together well.
NOTE: from this point on your main goal is to not deflate the meat mixture so be gentle!
Line a cookie sheet with aluminum foil for easy cleanup, place the cooking rack on the cookie sheet and spray with nonstick cooking spray.
In a bowl combine the coating ingredients
Scoop out 1 tbsp of the meat mixture and very gently shape it into a ball – don’t squish it or squeeze it or you’ll deflate the chicken! Roll the ball around in the coating until completely covered. Very gently shape into a nugget shape about 1/2 inch thick and place on wire rack.
You should get about 50 nuggets so put them as close together as you can on the rack without touching.
Bake in oven for 20 minutes.
