Free recipe: Guacamole

When you’re in charge of running your household you also need to be making sure that everyone is eating balanced and nutritious food, that includes snacks! Guacamole is an amazing fresh snack that can be eaten many different ways: with chips, on sandwiches, with sliced veggies, in an omelette, and on and on!

To get you started here is a shopping list:

  • 6 ripe avocados (they should yield to gentle pressure)
  • 1 large tomato (or a cup of cherry tomatoes)
  • 1 bunch cilantro
  • 1 bunch scallions
  • 1 jar pickled jalapenos
  • 1 lime
  • Salt (optional)

Be sure to get the freshest produce you can find; this really makes all the difference. You’ll be amazed at how quickly and easily this is to whip up – and if your kids are old enough to help, it’s a super-easy recipe that they can have fun helping with.

Guacamole

Ingredients:

  • 6 ripe avocados, removed from skin and mashed
  • 1 c diced tomatoes, seeds removed
  • 1 c minced cilantro (be sure to include the stems)
  • 1/2 c sliced scallions (include the green part as well)
  • 1/4 c diced jalepenos (or to taste)
  • Juice of one lime
  • Salt to taste

Directions:

In a large bowl mix all ingredients together (seriously, could it BE any easier?) – some believe that by mixing the avocado stones back into the guacamole that it will stay fresher longer.

Hint: cut the avocado all the way around lengthwise down to the stone; twist the avocado open into two halves. Very carefully use the knife to karate chop the stone once, then twist, and the stone should pop right out. Use a spoon to remove the avocado from the skin. This may take practice but it turns out to be a great party trick to impress your family and friends.

I recommend you make this just before serving but if you are going to store it for a while remember that avocado turns brown when exposed to air. To help avoid that take a piece of plastic wrap and lay it directly onto the guacamole and push down to remove any air and essentially seal it.
